Chinese New Year Cookies

These almond cookies are traditionally made to celebrate the lunar new year. They are gluten-free, low glycemic, and delicious. Try whispering little prayers and wishes for the new year into the dough as you’re making them, to up the magic factor. And, the most important part is… share them! The new year is a time for generosity and celebrating with others, not just loved ones but also acquaintances and strangers. If, at the beginning of the year, we stretch our heart and expand the boundaries of who we consider companions, the year will be generous with us in return.


Ingredients

1/2 c unsalted butter
1 c coconut sugar
2 whole eggs + 1 egg white
1 t vanilla extract
1/2 t almond extract
1 t baking powder
1/4 t salt
1 1/2 c almond flour (super fine or natural)
1 1/4 c oat flour
30-40 blanched almonds for topping

Directions

  • Cream butter and sugar w/an electric mixer.

  • Add two whole eggs and beat for another minute

  • Add vanilla, almond extract, baking powder, and sea salt, continue to beat.

  • Add the flours and beat until fully mixed.

  • Preheat oven to 350. 

  • Line two baking sheets w/parchment paper.

  • Scoop ~1 T of dough onto sheet per cookie. Wet fingers and gently shape dough ball to form a smooth patty.

  • Separate remaining egg white and brush a little onto each cookie.

  • Place blanched almond in center of each cookie.

  • Bake 10-14 minutes until cookies are no longer wet looking and edges are just beginning to brown.

  • Remove from oven and let cool. Cookies will be soft when you remove them but will harden as they cool.
